Have you ever wondered what it might feel like to sleep inside a 400-year-old convent perched on the hillside above Nice, waking to nothing but birdsong? That was the question I found myself sitting with on my first morning at Hôtel du Couvent — and the answer, it turns out, is rather life-changing (for someone that lives in central London).

Ranked among the top 50 hotels in the world and part of the Marriott The Luxury Collection, Hôtel du Couvent occupies a former convent in the Colline du Château neighbourhood of Vieux-Nice. It is one of those rare properties where history, architecture, and considered design have been woven together so carefully that every room tells a story.

Arriving at the Convent

The moment you turn off the bustling streets of old Nice and begin the climb toward the hotel, the city seems to fall away. The hotel sits on the hillside above the old town, and while you are only minutes from the cafés, market stalls, and restaurants of the Cours Saleya, you could easily feel like being in the French countryside.

Arriving with luggage? The hotel operates a golf buggy service to collect you and your bags, a thoughtful touch that immediately sets the tone. No wrestling with cobblestones or steep steps — just a smooth, warm welcome from the moment you arrive.

And what a welcome it is. A chilled drink and a warm madeleine with orange and honey greeted us on arrival (a detail I have thought about more than once since). A bottle of sparkling wine was waiting in the room. On departure, freshly-made madeleines made a second appearance; this time in a paper bag to be taken away and enjoyed later.

A Sense of Place Like No Other

What separates Hôtel du Couvent from so many properties that wear their heritage as a marketing badge is the integrity of the detail. Every element has been thought through with real rigour — from the hand-stitching of the hotel name on the laundry bag, to the artwork selected for the corridors, to the weight and finish of the light switches.

Nothing here is generic. The font used throughout the hotel conveys simple elegance and class, and the key to your room is not a card but a sensor hidden inside a leather “pouch”, the type that nuns use to carry their valued possessions in.

This is a hotel that understands what “sense of place” actually means. It is not simply about stone walls and arched ceilings (though both are present in abundance). It is the way those walls make you feel — grounded, quieted, aware of something larger than your own schedule.

At noon each day, the city cannon fires from the Colline du Château, and you hear it loudly from the hotel.

The Rooms: Named After the Nuns

Room categories at Hôtel du Couvent are named after the religious orders of women who once lived here — the Clarisses, the Visitandines, and others. We had booked a Clarisses room and were upgraded on arrival to the Visitandines category (one of the tangible benefits of booking through a preferred partner, which I will return to below).

The Visitandines room was the right size for two — spacious without being cavernous. Several windows looked directly over the courtyard and the breakfast terrace below, and the light that came through them in the morning was the kind that makes you reach for a book rather than a phone.

The room came with a sofa and coffee table, a yoga mat (and yes, there was enough space to roll it out to practise), and Villeroy & Boch crockery alongside silverware for in-room service. The mattress was one of the better ones I have encountered in a hotel. I slept deeply and woke up feeling rested, which, in a hotel stay, is never to be taken for granted.

Toiletries are provided by La Bottega, formulated by the perfumier Azzi Glasser, with a distinctive scent profile built around mugwort, amber, and vetiver. Earthy, warm, and nothing like the anonymous amenities you find in most luxury hotels.

Breakfast & Dining

Breakfast at Hôtel du Couvent is served in the courtyard when the weather permits, and it is one of those meals you find yourself arranging the rest of the morning around. There is a well-constructed set menu (hot drinks, fresh juices, pastries, fruit, eggs cooked as you like, granola with yogurt, and a cheese selection) alongside an à la carte offering for those who prefer to compose their own spread.

The pastries and bread deserve special mention. Everything is baked on site in the hotel’s own bakery, and the quality is exceptional. These are not the anonymous croissants of a hotel buffet. The sourdough bread is absolutely delicious with fresh butter and one of their local preserves.

Beyond breakfast, the hotel’s Le Bistrot des Serruriers operates with a menu that rotates regularly, keeping things seasonal and locally rooted. There is also a second restaurant on the property, giving guests options without ever needing to leave the grounds.

Facilities: Roman Baths & Gardens

The wellness offering at Hôtel du Couvent is anchored by the Roman Baths — a 7,500 sq ft subterranean spa space featuring three pools at different temperatures, a steam room, showers, and a dedicated relaxation area. It is one of the more considered spa environments I have experienced: calm, atmospheric, and aesthetically connected to the hotel’s history.

The outdoor heated lap pool (maintained at 23°C) sits at an elevation that gives you a panoramic view across the rooftops of Nice. In February it was too cold for me to enjoy a swim but there were others taking advantage of the peace and quiet for a swim or to read a book. The gardens, meanwhile, are beautiful to simply walk through — lush, sheltered, and with that same quality of rural quiet that defines the whole property.

The movement studio runs a structured schedule of yoga, pilates, and other classes. A timetable is shared at check-in so you can plan around it. Free weights are also available for those who prefer a less structured workout.

Hôtel du Couvent is one of those properties that earns its reputation through restraint rather than spectacle. It does not shout. It does not perform. It simply delivers — with consistency, with intelligence, and with a depth of character that is increasingly rare in luxury hospitality. I can’t wait to go back for a weekend in Nice.
